The white bull was the symbol of Druidry due to its start being linked to the star sign Taurus.

Bull imagery is found throughout the religions of the ancient world and even in the archetypal Briton John Bull.

Many classical authors wrote about the Druids and their superior knowledge of astronomy and navigation and we see this reflected in the megalithic observatories they left behind.
